- Lemon Ricotta Cake Recipe - Ingredients: 1 1/2 cups of all purpose flour 1 cup granulated sugar 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 3 large eggs (room temp) 1 1/2 cup whole milk ricotta 1 stick unsalted butter (melted and cooled 1 tsp vanilla extract Juice of a lemon Lastly, Powder sugar & raspberry’s for topping Instructions: Whisk dry - 1. Flour 2. Baking powder 3. Baking soda 4. Salt Whisk wet in a separate bowl - 1. Eggs 2. Sugar 3. Ricotta 4. Melted Butter 5. Lemon juice 6. Vanilla Combine wet onto dry. Fold but do not over mix. Pour into a round baking pan. I used a springform pan about 8 inch. I also cut out a round piece of parchment paper and placed at the bottom of pan. That is optional. Oven on 350 bake for 45 min. If the toothpick comes out dry remove. If still wet add 5 more min. Enjoy!
