TORTA DI MELE IN PADELLA (apple cake in a pan) recipe for when you need a last-minute dessert! I tested this cake recipe for a week to make sure it had the most delicious caramelized crust and moist center. Can’t wait to see what you think!
Ingredients:
2 eggs
½ cup sugar
1 tsp cinnamon
½ tsp ginger
¼ cup avocado or vegetable oil
½ cup milk
½ cup plain low-fat Greek yogurt
1 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking powder
1 large Honey Crisp apple
1 tbsp unsalted butter
1 ½ tbsp light brown sugar
1 large apple, peeled and cut into slices
Add eggs, sugar, ¾ tsp cinnamon, and ginger to a large bowl and whisk either by hand or with an electric mixer until frothy. Add vegetable oil, vanilla extract, milk, and yogurt. Whisk until lump-free.
In a separate bowl, combine flour and baking powder. Add this mixture to the wet ingredients and whisk until lump-free. Then grate in one large apple and mix once more.
Grease a 9-inch nonstick frying pan with butter. Sprinkle brown sugar over the pan and use a spoon to spread it. Place the apple slices on top of the brown sugar as shown and sprinkle with ¼ teaspoon of cinnamon.
Pour batter over the apples, cover, and cook on low heat for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. On a scale from 1 to 10, the heat level should be at 4 or 4 ½.
