There are so many restaurants in Melbourne to visit, it's overwhelming. I had so many on my list for my 3-day getaway but still craved old favourites, like the juicy XLB's from Hutong Dumplings in the city. They're a Melbourne institution, tucked down an alleyway off Chinatown and they're famous for their handmade dumplings. I filmed a segment for a TV show at Hutong Dumplings a few years back where I got see first-hand how their XLB's were made and even back then, it was fascinating to learn how they actually got the soup into the dumplings before steaming them. They make the broth, cool it until it becomes a jelly before mixing it with the mince meat mixture. When the dumplings steam, the jelly melts and becomes soup encased in the pastry.
